Have you heard the Meatless Monday movement? The advice is to leave food of animal origin, that is, meat, from the metal plate for at least one day a week – Monday.

This practice brings many benefits to the environment. According to the Brazilian Vegetarian Association (SVB), this one day without eating meat saves 3,400 liters of water per person, equivalent to about 26 15-minute showers; and it avoids releasing 14 kilos of CO2, carbon dioxide, into the atmosphere, which is equivalent to driving 100 kilometers in a regular car.

In addition, the campaign recalls that eating nutritious food based on vegetables reduces the risk of diabetes, heart attack and other heart diseases, helps control weight and reduces the risk of certain types of cancer, such as large intestine.

SVB also provides interesting information about animal slaughter in Brazil, where 10,000 animals die every minute. Cattle, pigs and chickens have reduced life expectancy for slaughter.

Ingredients

  • 1 bunch lettuce, in a tube
  • 1 cup cherry tomatoes, halved
  • 2 avocados in a tube
  • 1 lemon juice
  • Salt, pepper, olive oil and coriander sprigs to taste

Preparation mode

Arrange lettuce in a salad bowl, spread tomatoes, avocado and sprinkle with lemon juice. Sprinkle coriander sprigs on top with salt, pepper and olive oil before serving.

Potato salad with Parmesan and tomatoes

Ingredients

  • 6 large potatoes
  • salt to taste
  • 2 chopped seedless tomatoes
  • 1 chopped onion
  • 1 cup(s) grated chocolate Parmesan
  • 1/2 cup chives (chopped)
  • Lettuce leaves for garnish

soup

  • 1 and 1/2 teaspoon mustard
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon white wine vinegar
  • 1/2 cup (tea) of olive oil

Preparation mode

Peel and cut the potato into cubes. Cook with water and salt until soft. Remove and place in a bowl of ice water or ice water. Drain again and combine with tomatoes, onions and grated Parmesan. In a bowl, combine mustard, parmesan and vinegar. Beat it gently with a fork and pour the oil in a stream, stirring constantly, until it thickens. Mix with potatoes and refrigerate for 30 minutes. Serve on a plate decorated with lettuce leaves and sprinkled with chives.

Ingredients

  • 3 chuchus in cubes
  • 1 chopped red onion
  • 2 cups chard (strips)
  • 1/2 cup chopped parsley (green)
  • 100 g of chili pepper
  • Juice of 1 lemon
  • 2 tablespoons of white vinegar
  • salt to taste

Preparation mode

Boil the chayote for 5 minutes or until al dente. Drain and let cool. In a bowl, put the cooled chayote, onion, chard, parsley, chili pepper, lemon juice, vinegar, salt and mix. Transfer to a salad bowl and serve immediately.

Rice salad with eggplant

Ingredients

  • 1/2 cup (tea) of olive oil
  • 1 onion cut
  • 4 crushed garlic cloves
  • 1 yellow pepper in a tube
  • 1/2 red pepper in a tube
  • 1 eggplant in a tube
  • 2 cups of cooked white rice
  • 2 chopped tomatoes
  • 1 cup of fresh cheese, in cubes
  • 1 cup green olives (chopped)
  • 2 tablespoons of chopped parsley
  • Salt, oregano and pepper to taste
  • 2 tablespoons of apple cider vinegar

Preparation mode

In a pan, put oil, onion, garlic, pepper and eggplant.

Place on medium heat and cook for 5 minutes or until the ingredients are soft, stirring occasionally. Remove from heat and transfer to a bowl.

Add rice, tomatoes, cheese, olives, green onions and mix. Place on a plate, season with salt, oregano and black pepper. Sprinkle with vinegar and serve.

Palmetto salad with tomatoes

Ingredients

  • 1/2 bunch of washed lettuce
  • 2 chopped tomatoes
  • 1 glass of canned canned hearts, sliced ​​(300g)
  • 1 red onion chopped

  • 4 tablespoons of mayonnaise
  • 3 tablespoons of white vinegar
  • 1 teaspoon mustard
  • 1/2 teaspoon of salt
  • 1 tablespoon of chopped parsley

Preparation mode

Put on a plate with lettuce leaves. Arrange the tomatoes and the palm hearts in between and sprinkle the onions. Pour all the sauce ingredients into a container with a lid and shake vigorously until smooth. Pour over the salad and serve.
