The grill came from “Vai Ter Churras” and was replaced by an air fryer. But only in this episode! Although Bruno Salomão did not like the idea very much, he fulfilled the challenge that Leo Don Pimenta, owner of Don Pimenta restaurant, in Sorocaba (SP), proposed to make buffalo wings on the equipment.
A typical American recipe consists of the middle of a chicken wing coated in buffalo sauce, based on pepper and butter. The presenter prepares two options: oriental teriyaki sauce and traditional barbecue.
Before cooking them, Bruno makes a basic marinade in which the chicken is submerged for at least two hours. For every kilo of meat, use a can of wine, a dessert spoon of salt and two spoons of full spices – learn this magic mixture that will make your life easier in the kitchen by clicking here.
After the indicated time, the chickens need to be dried with a paper towel to get wet. Another trick that helps with the crust is a sprinkle of baking soda.
Then just preheat the air fryer to 200 degrees and bake the wings for 15 minutes on one side and 10 on the other side. Because all parts of the chicken are coated evenly, they should be mixed with barbecue, buffalo and teriyaki in a bowl.
The real flavor is the sauce.”
