Chicken cake with heart of palm and cottage cheese

The ingredients used for the chicken pot

  • 1 cup of boiled potato
  • 1/2 cup butter (melted)
  • 1 egg
  • salt to taste
  • 4 cups of all-purpose flour (approx.)
  • 1 yolk for brushing

Filling

  • 2 tablespoons of butter
  • 1 chopped onion
  • 400 g cubed chicken breast
  • 1 cup chopped palm hearts (300g)
  • 2 chopped tomatoes without skin and seeds
  • Salt, pepper and chopped parsley to taste
  • 1 cup(s) of cream cheese
  • 1/2 cup shredded mozzarella cheese

Preparation mode

In a bowl, mix the mashed potatoes, butter, egg and salt until it becomes soft. Slowly add flour, stirring until it hardens and releases from your hand. If necessary, add more flour. Wrap in plastic wrap and put in the refrigerator for 30 minutes. Divide the dough and open with the help of a rolling pin between two sheets of plastic. Line the bottom edge of a 22cm diameter removable pan with half the dough.

Put the butter in a pan on a medium flame and fry the onion and the chicken for 5 minutes. Add the heart of palm, tomatoes, salt and pepper and cook for 5 minutes. Remove from the heat and mix the green onions and cheese. Put in the mold and cover with the rest of the dough. Cut a large piece of dough and make a string. Decorate the square cake with ribbons and brush with yolk. Bake in the preheated oven for 30 minutes or until golden. Remove from heat and serve.
