Lavender is known for its calming properties and aromatic qualities, which is why it is widely used in the manufacture of essential oils, cosmetics and other cleaning products.

But lavender can also be eaten. Entrepreneur Doren Faria, a laundress in Londrina, taught the Caminhos do Campo team to prepare butter cookies with flowers.

“This recipe comes from a chef who is a good friend of ours, who has worked in England for many years. It is derived from ‘shortbread’, an English biscuit that is used there,” said Faria.

Ingredients for the dough

  • 100 g refined sugar
  • 200 g of butter at room temperature
  • 300 g wheat flour
  • 2 tablespoons of lavender flowers

Ingredients for topping

  • Refined sugar
  • 1 lemon
  • lavender for garnish

Mix sugar and butter in a bowl. It can be with a wooden spoon, but take care of the consistency, which must be used, with some small air bubbles. This will make the cookie lighter.

Add two tablespoons of lavender flowers and, very little, wheat flour.

Combine the ingredients well and finish mixing with your hands – the warmth of your hands will help soften the butterfat and flour. The dough should be easy to shape.

Divide the dough into pieces and make rolls with it. Wrap with plastic wrap and place in the freezer for up to three hours. This will allow the butter to refreeze and harden.

Then it’s time to cut the roll into your favorite shape. Bake in the oven until the cookies are golden brown.

For the icing, mix some granulated sugar with a little lemon juice. There is no more in the lemon, because the mixture cannot be too much water. Spread the cooled cookies, so they don’t split, and finish with a lavender flower to decorate.
